Tried this although with different vegetables (can't remember which ones now as it was a while back). Turned out nice (not phenomenally great - but good).
500 gms vegetables (lightly boiled) carrots, potatoes and tinda(!), green beans, egg plant (coaked in water-raw) and capsicum
Eggplant cut like steak fries
2-3 medium tomatoes pureed
1 big onions boiled and pureed (12 need 1/2 cup)
1/2 tsp ground zeera (coarse crushed)
red chili 1-1.5 tsp
haldi 1/2 tsp
adrak lehsan
salt
dahi 1/3 cup
1/2 tsp sugar
1/2 tsp garam masala
Heat oil in a kadhai, add eggplant and fry until a little soft. Add the rest of the veggies and saute.
Remove veg's and set aside. Fry onion puree in remaining oil. Add 1 tsp adrak lehsan paste.
Add turmeric, chili pdr and tomato puree. Fry. Add 1 tbsp ginger.
Add yogurt. Keep frying. Add vegetables. Cook for a while and dish out.
